How Have They Survived? Avoid Them..
I dined in these cafeterias for decades. I never really liked them that much. The food was passable. Quality control was consistent. Deserts were consistently good. Salads were often sour and dreadful. The places stank of boiled cabbage or overcooked broccoli. Staff members are good. I came to know many. However, there is nothing special about these places.
For a few years, they tried to improve or, at least, vary the menu. Now they are back to blandness. The fried chicken will look good. It will be consistent but it will not be tasty. Almost everything there is like that.
The décor in all of them is dreadful. They look cheap. They are as tasteless as the food is.
How people from a region that prides itself on its cuisine tolerate this awful fare for decades eludes me. Quality control, except for salads, is good, but the food generally is boring and bland. Some items such as the gumbo remain consistently inedible.
